5 Cocktail Trends That Are Shaking Up a Storm

Here are 5 Cocktail Trends That Are Shaking Up a Storm

1. The Art of Simplicity

Minimalism is reshaping the cocktail scene. “We’re moving away from extravagant garnishes and opting for sleek, minimalist glassware,” says AJ Durow, bar manager at Bascule Bar and owner of BL_NK. This approach highlights gourmet clear ice as a striking visual element.

Amori Burger, executive chef at Upper Union, who works closely with mixologist Julian Short of Sin+Tax, agrees: “There’s a shift towards refined elegance. Instead of heavy garnishing, we focus on elegant stemware and subtle touches like a sprig of herb, a dusting, or a delicate foam.” In this pared-down style, the beauty of the vessel becomes integral to the drinking experience.

However, simplicity doesn’t mean the end of tropical flair. “Some bars are reintroducing tiki cocktails with a more refined approach, while others are embracing pre-batched drinks for consistency,” AJ notes.

2. Mindful Drinking and Sustainability

Sustainability and mindful consumption have evolved from trends into industry standards. “Sustainability is no longer a buzzword—it’s a necessity,” says Matthew Cox of Queens. “The shift towards mindful drinking is also fueling the rise of low and no-alcohol cocktails.”

AJ echoes this sentiment: “Non-alcoholic cocktails have carved out a permanent place on menus. We’re also seeing a rise in wine-based and aperitivo-style drinks.”

3. Reinventing the Classics

Classic cocktails remain a staple, but with innovative twists. “Reverse recipes are trending,” AJ explains. “For example, a reverse margarita uses more liqueur and less spirit, aligning with the low-ABV movement while enhancing flavor.”

She also predicts that 2025 will bring creative martini variations and tasting flights of mini martinis.

4. Embracing Umami

Savory flavors are making their mark, expanding the cocktail flavor spectrum. At Upper Union, Amori Burger has been incorporating umami notes since the bar’s inception.

“We use ingredients like oregano, spekboom chutney, and lacto-fermented chili to create cocktails that complement our dishes,” she says. One standout is a martini featuring lacto-fermented passion fruit, chili cordial, tomato water, and lemon juice—a perfect balance of savory and sweet.

5. Bold New Flavor Profiles

Herbal and spicy notes are making a strong comeback. “Vintage liqueurs are starring in modern reinterpretations of classic cocktails,” says AJ. Meanwhile, Matthew Cox predicts, “Exotic global ingredients will take center stage, and I’m eager to explore molecular cocktails inspired by different cuisines.”

Sanpellegrino Italian sparkling drinks continue to be a go-to mixer, with bartenders putting their creative spin on them. AJ’s favorite is the “Bascule Sunset,” blending Sanpellegrino Pompelmo with vermouth for a light, refreshing sip.

Matthew enjoys the “Mystery & Fortune,” a mix of vodka, basil, litchi, citrus, and Sanpellegrino Melograno & Arancia, as well as the crowd-favorite “Twist of the Knife,” featuring Sanpellegrino Chinotto.
